Picked up this book recently @greenapplebooks. I was really struck by this quote from @marcuscooks that I thought I'd share. "...Many readers may still think that black food starts and stops with dishes like fried chicken and grits 00 a certain idea of "soul food" stuck in time. There's much to learn by studying these dishes, but they reflect just one of the many facets of Black cooking. Just as our country is now familiar with and recognizing and exploring the regional diff...erences in Italian or French or Chinese food, this book asserts that the food of black cooks has its own unique richness to explore. Think about music. What if we stopped studying Black music after the rise of bebop? We'd miss out on hip hop, afrobeat, reggae, funk, and many other unique sounds and statements about our world. When we think Black food is just one thing, we hear one song and think it represents the entire record library. Black food is constantly engaging with its roots, adapting to new circumstances, and integrating other ideas. It is anything but monolithic." I won't try to some of the introduction too much, but he talks about having written in the book as a response to a lot of the challenges with race America's been going through this past year. It's great - I love that food can help us talk about these kinds of things. And the recipes are stellar (now I just need some time to cook a few). Buy it!!! Curing bacon in our new "pizza proofing" boxes. They just so happen to be the same size as our pork belly cuts. Our bacon used to be prepped and cured in vacuum-sealed plastic bags. We'd go through a ton of them every week. It was just the best, most sanitary way to handle it. Now that we can sell more products , we've been able to cure more pork in less space with less waste. Same recipe, same quality. I recognize that this information is very boring. But when you times it ...by hundreds of pounds of bacon a week. It makes a huge difference. It's the little victories! Daniel has been a regular for a good while now. Shrimp & Grits is a dish that's really special to me and my South Carolina roots.
