#Recipe by @anjan Dal (lentils) is a such a staple, omnipresent component of Indian cuisine! It’s considered peasant food and a dish we were forced to eat as kids. The Indian version of eating your spinach It’s only when you are older and wiser, with a much more sophisticated palette do you realize how amazingly delicious and healthy this dish can be when prepared with the right blend of spices, herbs, and other vegetables Each region in India and every household has it’s... own variation. Here’s my recipe from a few nights ago as a general guide. Adjust spices up or down. Use your instincts Yellow dal (lentils) Ingredients - 2 cups, tsp turmeric powder, tsp black pepper, 1 bay (or curry) leaf, 1 clove, 3 cardamom pods, cayenne pepper to taste, salt Yellow Dal (Chana) Directions - Add dal to 6 cups of water. Bring to boil. Lower heat and keep it on roiling boil. Add spices in small amount and adjust as necessary. dashes of turmeric, black pepper, bay leaf (curry leaf if you can find it), 1 clove, 3 green cardamom pods, dash of cayenne pepper, salt. Stir occasionally to ensure dal doesn’t burn at the bottom. Add water when dal becomes too dry. Cook till dal is soft and a little mushy. Indian dal is never served al dente but more like a thick soup Tempering Ingredients - tsp poppy seeds, tsp mustard seeds, 1 dried red chile (or thai chile), ginger-garlic paste (ground) 50 grams each, red onion, 3 scallions chopped, leaves from 10 sprigs of cilantro, 1 tomato Tempering (Tadka) - Heat pan on high. Add ghee or canola oil. Reduce to medium-high. Add poppy seeds, mustard seeds, dried red chile whole, stir for 45 seconds, add ginger-garlic paste, keep stirring to ensure nothing burns for about 2-4 minutes but don’t burn, add onions and keep stirring vigorously till lightly brown and translucent. Add tomatoes and whole or chopped chile. Add salt. Keep stirring till most moisture evaporates, but not too brown Add tempering directly into dal. Squeeze to lime. Add salt to taste. Stir. Add scallions and cilantro after dish is cooked. Stir for 15 seconds. Serve with a teaspoon of ghee on the top Cook a Wagyu steak i

Long before DOSA opened as the first modern, South Indian restaurant in San Francisco in 2005, there was Floyd Cardoz (@floydcardoz) also from my hometown of Bombay, who founded Tabla in 1998 with Danny Meyer (@dhmeyer) in NYC, the first of its kind in the U.S. He was a pioneering force in the culinary scene and was the first to give our cuisine the high respect it deserved! He also won the very first Top Chef Masters many years later @bravotopchef! . It is incredibly tragic that he succumbed to COVID-19 today! While we would love nothing more than to continue serving you during this time of need, we feel its more important to act responsibly during this critical period and hope that other restaurants will do the same. ...
