D'Armond Family Cheesecake

Thanks to Luke @cyclopsfarms , Chef Davin @wrenchandrodent and Chef James @seasidemarket for having me at your dinner event last night. What an awesome time! So, these are pictures of the process to make sweet potato cheesecake. Got a bunch of just picked sweet potatoes from @cyclopsfarms , washed them, broke them down and coated them in coconut oil, organic honey, cinnamon, nutmeg and kosher salt. After roasting them I mashed them, still leaving chunks of sweet potatoes fo...r texture. I incorporated the sweet potatoes into the cream cheese filling. Had the best time tonight @cyclopsfarms for a dinner event put on by Alex and Davin from @wrenchandrodent. The food was absolutely amazing, the venue was beautiful and the people were awesome! The passion fruit cheesecake with a habanero/ apricot glaze was a huge hit. We garnished the plate with toasted passion fruit seeds, crystallized sugar and micro greens. Started with a box of passion fruit from Luke @cyclopsfarms. Broke them down and removed the pulp. Food processor and strain to separate seeds from pulp. Toasted the seeds and reduced the juice into a passion fruit syrup. All the makings of an awesome collaboration with Alex @wrenchandrodent for a dinner event Monday.
