How do we brew better? Farmers sort the coffee cherries for our Bali Blue Moon by hand. The coffee picked must contain at least 95% red fruit to be accepted for processing. After processing, 18 - 20% of beans are removed during another hand sorting because they are not up to standard. This final hand sorting is essential as the visual inspection confirms the beans are the correct size, color and density.

Dark roast beans are roasted at a higher temperature for a longer amount of time, which allows the sugars in the bean to caramelize and create a more robust, distinctive flavor.
