Casa de Mesquite

One of my favorite things to do with mesquite is to sprinkle it on dulce de leche(or caramel ) ice cream and then beat it in until it reaches a light tan color. It really accentuates the dulce de leche flavor, it is softer and very nice. Also just beat it into whipping cream or icing until you get a light tan color

We are very pleased to announce that the wonderful Argentine Scrosoppi family, that was of immense help to Peter when he was in Argentina from 1998 to 2003 has initiated a project to build a new Mesquite flour processing plant in Argentina. This new plant will have much improved equipment and be located in the capital city along all weather terrain roads. This family will continue to support the free Adult Training School in the Diocese of Anatuya by purchasing all of their mesquite flour. Two Mesquite locos From 1998 to 2002 these two crazy guys thought a major need was to select best the Prosopis mesquite trees from genetic improvement trials for high production of sweet highly palatable pods, fast growth and high production, to clone them and put them into a replicated trial. Most Argentine scientists thought they were crazy. Now this 16 year old trial producing up to 8000 lbs of pods per acre and demonstrating genetic differences among clones for insect and disease resistance is recognized as a major genetic advance for Argentina.
