Here's the winning recipe to commemorate our virtual reunion. (Now you can bring a taste of camp home for the holidays!) PUMPKIN SQUARES - makes one 13 x 9 Ingredients Crust: ... 1 boxed yellow or white cake mix (save 7/8 cup for topping) 1/2 cup melted butter 1 egg Topping: 7/8 cup reserved cake mix 1/4 cup sugar 1/4 cup butter 1 tsp. cinnamon Filling 4 eggs 1 can pumpkin (29 oz) 1 1/4 cups sugar 7/8 cup whole milk 3/4 cup nonfat dry milk 1/2 tsp. cinnamon 1/2 tsp. cloves 1 tsp. salt Instructions Preheat oven to 350 degrees. Combine crust ingredients and press evenly into ungreased 13 x 9 pan. Combine filling ingredients and spread over crust. Cut butter into remaining topping ingredients until crumbly and sprinkle evenly over filling. Bake uncovered for 45 - 60 minutes until toothpick comes out clean when poked into center. If top is browned before center is set, cover with foil to prevent burning. See more
