It’s not everyday when you make a cake for someone and they are moved to tears because of it. This just made my day. I can only imagine what this cake meant to the birthday girl. These days of distance learning and isolation have been so hard for our kids... and still going for some of us in California. My heart goes out to all the kids in this situation. Here’s some Thoughtful Thursday cake baking tips!After years of experimenting with soo many cake recipes including mix recipes, doctoredmix recipes, scratch recipes, grandmas recipes lol... I have found that they ALL have the potential to be good OR not so good. It turns out that THE most important thing for any recipe is to include a ‘moisture agent’ which basically means make sure the recipe includes buttermilk or sour cream. These ingredients help make cakes more moist...! To boost moisture even further, freeze your cake overnight (wrapped) and let the thawing process bring in even more moisture. Also, if you like a fine crumb make sure to use cake flour. AND, if you want a cake flour texture without starting from scratch... try @pillsburybaking mixes.
