Congratulations to our Meat Science program on winning the Norm Eggen Championship Cup at the California Association of Meat Processors' Product Show. Go Bulldogs!

Congratulations to our Meat Science Club Members who competed this weekend at the California Association of Meat Processors Convention & Product Show. Fifteen students represented Fresno State in the Collegiate Class with second going to Morgan Henson with Spicy Sicilian Sausage and third going to Bulmaro Bribiesca with Santa Maria Sausage. Fresno State also came home with the overall university award beating out UC Davis, Chico State, and Cal Poly SLO. Thank you to graduate ...student, Spencer Carter, for helping the undergraduates with their products and Taylor Ross, meat lab manager, for her assistance as well. Dr. Henson and Dr. McKeith are extremely proud of this group. Other students who attended and contributed to the win are Spencer Carter, Lauren Costa, Brandon Craighead, Makenzie Flach, Carlos Juarez, Francisco Murillo, Keith Nunes, Kirsten Soriano, Megan Terrazas, Johana Torres, Montserrat Perez Valadez, Brittany Whitesell, and Hannah Williamson. Students in Advanced Meat Science were fabricating Pork carcasses today into subprimals and retail cuts. They weigh each cut and how the cuts are priced.

Last night was our first Meat Science Club Meeting of the year. We had a great turn out. It’s Game Day! Don’t forget to stop by the Fresno State Gibson Farm Market to pick up your favorite meat items for your tailgate. Also, try our new Zesty Citrus Fresh Pork Sausage...limited supply...only 50 lbs were made. Go Dogs!

This year Fresno State is featuring an agricultural commodity each home football game. With this new commodity feature the Fresno State Meat Science Program is developing a new sausage to go with the featured commodity. Only 50 pounds of the sausage will be made available for purchase at the Fresno State Gibson Farm Market.This Saturday the game against University of Minnesota will be featuring citrus. The Fresno State Meat Science Students have developed a Zesty Citrus Fresh Pork Sausage. Make sure to get yours before it is sold out.
