Bjjbbq Bar-B-Que Competition Team

Our final comp on 2017. October 13th and 14th. We thought we had it figured it out and we didn't get the results we wanted from this one. After looking at the points though it was the 2nd best we have ever done. Just didn't live up to our own expectations. Which is alright for a first year team. We came in 38th out of 56 teams with 653.0172 points. At this point I have little to know idea what flavor of brisket these judges are looking for. That chunk of meat was perfect! ... We will have it figured out and be back for January Winter Q, probably at the same place.

Spent the morning finishing up this sugar free, whole 30 compliant bacon! Took about a week in the cure and smoked on hickory and apple wood. All packaged up and ready to go. #bacon #whole30 #paleoish @ Burbank, California

August 19th and 20th at the Del Mar Racetrack. Boy did we mess this one up! I kept pushing the timing closer and closer to the turn in times, and didn't [ay attention to the weight of the meats. Really broke the schedule and turned in meats that looked great but not nearly as done as they should have been. The big lesson here is that its better to turn in meat that is done early than to try and rush it.

Done! We turned in 4 boxes and think they are excellent! A few changes to the cook times caused some stress but made for a better finished product. It's in the hands of the judges now. We will see how we did at 5:30.

The longest weekend ever. After my daughter came down with some kind of stomach flu. I spent the weekend between home, hospital, and competition site. Then I came down ill the moment I lit the smokers. If it weren't for my father and teammate Ron we would have been done. But they pulled it off! 56th out of 77 with 646.2060 points.
