We were in the #bar lab creating 20 different flavors of shrubs-an old colonial-era method of preserving #fresh #fruit using vinegar, pure cane sugar, and different #fruit / #herb. We used apple cider #vinegar and aged balsamic vinegar for extra complexity. There were over 15 different #exotic fruits & herbs at our disposal including star fruit, guava, & kumquat. Some of the herbs included lemon grass, ginger, cloves, and tarragon.
