Thanks to everyone who came out this weekend and help support me. I had a bunch of issues with our equipment and trying to cook in this heat. Overall most the food turned out great but I think some of the racks of ribs went out over cooked because one our food warmers was not made to be outside in 105 degree weather and would not keep our desired temperature of 145 degrees. Instead it was spiking at over 180 degrees at times which definitely was made some the ribs over done i...n my opinion. Also some of our sausages got over salted because we had to rush everything in the end to get it all done in time. If anyone got any defective items from us send me a DM and I will make sure we take care of you at our next event you come to. However I did find out we can make way better Jalapeno Cheddar Cornbread on our smoker than in the oven. I had a large catering order that wanted to add cornbread today. In this heat there was no way I was going to fire up the oven in my little food trailer. I crossed my fingers and brought the smoker up to 325 degrees and hoped it would turn out ok. It turned a lot better than ok it was great. We definitely will be cooking all our cornbread in the future on the smoker. I personally am not normally a big fan of cornbread but I have to say this is the best I have had. Everyone that bought cornbread off us this weekend we definitely will hook you up with this some next time you visit us. Just send me a DM when you place your order. Also next time we will have it with our orange zest honey butter included. In addition, if you have read this far I know you are truly a fan of the food I make. We may be adding a dine-in option to a pop-up in 3 weeks. The barbecue is definitely best if it is ate right after we slice and plate it. I am tired of having to put everything in to go containers and not being able to make platters of food like we used to at our brewery pop-ups.
