We always like to keep things fresh... and on that note, we'd like to share with you 3 ways our olive oils stand out from other oils. We Olive has been certified as "extra virgin" by the California Olive Oil Council. For an olive oil to be seal certified, it needs to adhere to strict guidelines. The guidelines are as follows: 1. All olive oil must be mechanically extracted without the use of chemicals or excessive heat.... 2. There must be less than .5% free oleic acid in the oil itself. 3. Oil must pass a blind taste test, preformed by a certified tasting panel, to ensure positive taste elements and no defects. Once these three things have been passed, an olive oil can become Seal-Certified. This seal provides quality assurances to both the consumer and retailer that the product is indeed 100% Extra Virgin Olive Oil. See more

Heirloom Tomato, Avocado and Burrata Salad on Grilled Garlic Toast We adapted this recipe from How Sweet Eats and can be eaten for breakfast, lunch, and dinner. Check out the original recipe which has a delicious herb drizzle that we replace with our Fresh Basil Olive Oil to save some time. It is the perfect way to eat peak season heirloom tomatoes and avocado toast at the same time. Ingredients 1 large baguette, sliced in half 6 tablespoons Fresh Garlic Olive Oil... 3 to 4 heirloom tomatoes, thinly sliced 2 avocado, thinly sliced 1/2 red onion, thinly sliced 2 balls fresh burrata cheese fresh basil and oregano leaves for topping 1/3 cup Fresh Basil Olive Oil ~Drizzle with We Olive Balsamic~ Directions 1. Heat the grill on the highest setting. Once hot, place the bread cut-side down on the grates until golden brown and toasty. 2. Remove from the grill and place on a large baking sheet. 3. Drizzle the toast with the Fresh Garlic Olive Oil, about 3 tablespoons for each side. Layer on the sliced tomatoes and avocado. 4. Literally season the tomatoes and avocado at this point. Add on the sliced red onion as much or little as you’d like. Drizzle about half the Fresh Basil Olive Oil on now, then cover the top with pulled burrata. 5. Drizzle the rest of the Fresh Basil Olive Oil on. Cover with fresh basil and oregano leaves. A sprinkle more of salt and pepper if you’d like and serve! See more

When most people think of California, images of sunshine, beaches, and Hollywood come to mindbut did you know that California’s climate is also perfectly suited for growing olives? In fact, our hot and dry summers are ideal for growing olives with optimal oil and antioxidants! California is actually home to a wide range of olive varieties, including: Manzanillo, Sevillo, Mission, Ascolano, Frantoio, Arbequina, and Leccina. Of course, simply having the right climate to grow... olives does not mean you will get high quality olive oil- a lot of knowledge and care goes into harvesting, milling, and storing the olive oil the local artisans produce. Generally, our olives are harvested between the months of November and January; but knowing when to harvest each varietal to produce the desired flavors takes skill! For example, younger fruit that is still green will produce a bold, grassy, herbaceous, and peppery or spicy flavor; in contrast to a ripe black fruit that yields a milder, buttery, floral, and only slightly peppery taste. Not a lot of people know this, but all together, there are 350 different crops produced in California. Within this demographic, there are over 100 olive cultivators alone. These cultivators are spread across the myriad of soil types, climates, and microclimates that California has to offer, thus creating a virtually limitless range of flavor possibilities for the olive oil they produce. One of the most exciting aspects of the California olive oil industry is that from harvest to market, consumers can enjoy fresh olive oil within a matter of days or weeks!
