Hotels are finding new ways to keep pace with this trend, empowering guests to explore scenery, practice social distancing, and decompress in nature. Craving a romantic getaway this Valentine’s Day? Shake up the spirit of the Emerald Isle with the "Coote Kiss" from Ballyfin Demesne. Named for Ballyfin's original owners, the Coote family, this craft cocktail combines Irish ingredients and estate-grown produce, served fireside at the Ballyfin Bar: 2 oz Redbreast Whiskey ... oz Maple Syrup 1 oz Lemon Juice Splash Club Soda 3 Strawberries, sliced (2 for recipe, 1 for garnish) TBSP Pomegranate seeds Muddle together the 2 strawberries, pomegranate seeds, lemon juice and maple syrup in in a tumbler glass until well mashed. Add Redbreast whiskey, fill glass with ice, and top with club soda. Garnish with a strawberry, stir and serve. Slainte!
