As part of our Fall Series, we are offering various pumpkin-style recipes. Since it's #NationalPumpkinDay, today's recipe is the perfect use for your leftover pumpkin seeds! Chef Leslie's Chipotle Sweet Potato Soup is a crowd-pleaser for both young and old (and everyone in between). Ingredients 1 medium sweet potato, peeled and cut into large chunks of medium yellow onion, cut into 3 pieces... 2 cloves garlic, peeled Water to cover potato by 1 inch 2 tbsp maple syrup 1 tsp chipotle paste or tsp dried chipotle or chili powder 1/8 tsp dried oregano cup coconut milk or Greek yogurt 1 tbsp freshly-squeezed lime juice or apple cider vinegar Salt and pepper to taste 2 tbsp roasted pumpkin seeds, to garnish 1 each green onion, thinly sliced, to garnish Preparation Place sweet potatoes, onion and garlic in a 4 quart plus-size pot and cover with water. Bring to a boil and reduce the heat to medium. Cook until potatoes are tender, about 20 minutes. Remove from heat and cool slightly to make handling easier. This part can be done the day before. Transfer to a blender (in batches). Add the maple syrup and chipotle chiles and puree until smooth. Return mixture to heat and bring up to almost a boiling point. Reduce heat to simmer and add the lime juice, milk or yogurt, salt and pepper. Today, we're celebrating #NationalDessertDay with her delicious Low Sugar Crustless Pumpkin Pie. Recipe below. Makes 9 servings Ingredients:... Cooking spray or 2 tsp coconut oil 3 large eggs cup granular monkfruit sweetener cup canned, full fat coconut milk 22 ounces canned pumpkin (1 15 ounce cans) (not pumpkin pie filling) 2 tsp salt 1 tbsp pumpkin pie spice 1 tsp vanilla extract Preparation: Preheat the oven to 350F Lightly spray or grease a 9 x 9 inch pan Whisk together the eggs, monk fruit sweetener, coconut milk, pumpkin, salt, pumpkin pie and vanilla extract. Put the pumpkin mixture into the prepared pan and bake for 40-45 minutes, or until firm.
