My client Savannah is a college student who has been struggling with her relationship with food. While we have made progress in the last four months of my nutrition coaching program, one area she needed help with was finding and eating snacks during the day. Her goal was to start prepping some snacks for ...busy days to feel energized and not settle for what’s available at work. In my two decades as a Dietitian one of the biggest joys is to see my clients enjoy their fave foods while meeting their unique health and wellness goals. When my client M came to me 5 weeks ago, her A1C was 7.6%, she was trying to do a juice/detox type diet to lose weight and improve her blood sugar. She is an Indian American and quite frustrated as she was not eating any of her favorite traditional foods due to fear that it was negatively affecting her diabetes. Over the l...ast 5 weeks we have gradually worked on including all her fave Indian foods and the best part is that she is happy, losing weight naturally, sleeping better and her blood sugar numbers are improving. I mushrooms as they are nutritious & delicious! Mushrooms are low in calories, fat free, cholesterol free and more importantly provide key nutrients such as vitamin D, B vitamins, antioxidants & potassium. While I enjoy all types of mushrooms, in today’s recipe I am featuring one of my faves - Portabella Mushrooms! These are large mushrooms related to crimini mushrooms. Each portabella has a rounded flat cap connected to a thick stem. Underneath the cap you will find da...rk brown fleshy gills. One whole piece or cap provides19 calories and 2g protein. They are an excellent source of selenium, niacin, a good source of pantothenic acid. Cooked portabella mushrooms have a chewy texture and an earthy flavor. Featured Recipe: Portabella Mushrooms with a Spicy & Tangy Green Chutney A delicious mushroom dish that takes its unique flavor profile from an Indian inspired spicy chutney. This flavorful dish can be served in a variety of ways as a side dish or entree. It is a perfect dish for anyone who is plantbased, vegetarianor an omnivore :-) Makes 4 servings and total prep+cook time is 20-30 minutes 1 T olive oil 4 Portabella Mushroom caps (cleaned and with gills) Few drops Liquid Aminos Green Chutney 2 cups chopped cilantro 1-2 jalapenos, roughly chopped and deseeded (if you prefer less spicy) Juice of 1 lime 1 tsp minced garlic tsp ground cumin 1 tsp ground cardamom cup water - tsp salt Optional cup chopped walnut pieces 1. Blend all the green chutney ingredients in a powerful blender and set aside 2. Heat a skillet on medium-high heat with olive oil 3. Add 4 portabella mushroom caps and sprinkle 1-2 drops of liquid aminos on them 4. Cook for 5 minutes and flip the caps 5. Add 1-2 drops liquid aminos on the mushrooms and cook for another 5 minutes Serving suggestion: Top each cap with a tablespoon of green chutney & sprinkle chopped nuts Enjoy these Portabella mushrooms on a bed of greens, on a bed of creamy polenta or as a side dish Have you tried portabella mushrooms? Guess what? It’s National Fajita Day! Fajita is a Mexican dish that usually features onions and peppers sautéed with meat or chicken and served in a sizzling pan with tortillas, lettuce, salsa, I love fajitas as they are loaded with colorful veggies and enjoy them with beans, rice, shredded salsa . . ...
