What is sashimi? Sashimi is a Japanese delicacy consisting of fresh raw fish or meat sliced into thin pieces and often eaten with soy sauce. Sashimi is often the first course in a formal Japanese meal, but it can also be the main course presented with Rice and miso soup in separate bowls. Japanese chefs consider sashimi the finest fish in Japanese formal dining and recommend that it be eaten before other strong flavors affect the palate.

We here at Totoyama pride ourselves with using only the best ingredients such as our local Koshihikari strand of rice. Koshihikari, mean’s light of the Koshi Providence it came to be in the 1950s and since then it has been a premium rice in Japan. Koshihikari short grain rice retains moisture longer than other varieties of rice to assist in perfect sushi shaping. The texture and the taste of the rice makes the difference - soft, moist, springy and slightly sweet - for the best sushi eating experience. Our Sushi is delicious as it is and therefore we partner it with only the best.
