Wine Fact It's no secret that the climate around the vineyard places an enormous role in a wine's flavor. Curiously enough though, lower quality soil typically produces some of the best wines. It sounds counter-intuitive but there's some reasoning behind it. When the grapevines realize they're in an unfavorable environment, they go into survival mode by extending their roots deep into the soil. All fo the extra nutrients pour into the fruit of the plant. The added amounts of sucrose result in one flavorful vintage!

Wine + charcuterie = A perfect match There's no "right" way to put together a charcuterie board - just let your creativity run wild! Before you get started, consider what wines you will be pairing with your food. From there, here are a few general guidelines to follow as you craft the perfect board [1] Cheeses - Have at least one soft, firm, aged, and blue cheese out.... [2] Meats - Blend some basics, like prosciutto and salami, with seasonal flavors like maple-glazed ham and spiced chorizo. [3] Fruits - Look for mild, sweet, and versatile fruits to set out. You can't go wrong with berries, apples, and grapes. [4] Spreads - Placing pesto, hummus, or jam can upgrade even the best of pairings. [5] Bases - Have a blend of crackers, crostini, and sliced bread available to choose from. See more

Decanting 101 When uncorking an aged red, decanting is an absolute must. However, not all are made the same. Typically, the wider the base of the decanter, the more full-bodied the wine it is most suited for. The point of decanting is to introduce enough oxygen into the vino so that it softens the flavors that have sharpened over the years. For a light-bodied red, about 30 minutes should do. However, with fuller bodied reds, a few hours will be necessary. When it comes to older wines, decanting the night before you intend to drink it will make them all the more spectacular.
