Tonight, as we are at a rest stop past Boise - on our way to California where I’ll be flying from to see my m...om in Peru, as she heals from a head injury - I made a delicious Vegan Papa a la Huancaina. Amidst emotions and during an exhausting road trip with our gigantic trailer, I managed to nail this traditional Peruvian dish, all vegan. It’s not in my new recipe ebook Rich + Vegan, so I’m including this recipe that I improvised on this post. My favorite Huancaina ever!! But I’m biased. 4-6 Boiled potatoes (russet or similar - I used a lot of tiny ones that Dylan grew in Idaho) Huancaina sauce: Blend smooth - 1/2 cup of raw cashews 1/2 cup of Safflower oil or other 1/2 cup of oat milk or other vegan milk 3-4 tablespoons of Nutritional Yeast or more to taste 1 teaspoon of salt or to taste 1/2-1 teaspoon of Cayenne Pepper or >< as spicy as desired 1/2-1 teaspoon of Turmeric powder 1 garlic clove Serve with Kalamata or Peruvian black olives and... Veggies on the side: Radicchio Red Kale Fresh Basil Sautéed lightly in Safflower oil with: Coconut aminos Cayenne Pepper Turmeric powder Black pepper Serve as pictured. I couldn’t find organic tapioca flour or organic tapioca starch in Sandpoint, ID. So, instead of making my delicious vegan cheese balls, I improvised and made c...ashew cheese bread. It’s so yummy! You can make this by following my Vegan Pão de Queijo recipe in my recipe ebook Rich + Vegan page 127... and instead of tapioca flower and starch use 1.5 cup of organic whole wheat flour (or gluten free flour). Blend raw cashews in organic extra virgin olive oil and safflower oil equal parts to make one cup of this mix. Follow all other instructions as in my recipe in Rich + Vegan.
