If you haven’t tried the salmon yet, or if it’s one of your favorites, a quick FYI that it will be switched out after the holiday for something new So I guess the time is now? Or at least in the next couple weeks. grilled king salmon: marinated heirloom tomatoes/ cucumber tabouleh/ charred eggplant puree/ turmeric oil.
It is with deep sadness and crushed hearts that we announce the passing of our longtime friend and lead cook, Francisco Torres. The Corner will be closed today in his honor. Ever the fighter, Francisco battled cholangiocarcinoma with fierce determination and grit. We will miss him immensely. To everyone who donated to his GoFundMe, thank you. Francisco was incredibly humbled by the generosity of people he had never met. Thank you. When I started the Corner 9.5 years ago it was in the middle of the recession. I thought if I could make it through that we could make it through anything. Today is Small Business Saturday. We’re in the middle of a pandemic and our guests are eating outside. To all who have supported us over the years and especially these past 9 months, a tremendous THANK YOU. When you take a look at the restaurant/retail landscape this holiday season I would encourage you to shop small. We need our communities now more than ever and are so grateful to the loyal guests who make it able for us to keep doing what we love. Weiser Farms radishes & butter: grilled radish tops/ hand churned butter & sea salt - those who get it, love it. Chris said it’s when you want to eat radishes in France like the French, but you can’t get to France.
If you’re in that pre-Thanksgiving what can I eat that’s not Turkey so I keep my hollow leg ready to roll mindset, we suggest our braised heirloom fall squash fuyu persimmon/ walnut/ cilantro/ mint/ tikka masala sauce. It is unlike anything you’ll eat on Thursday in the best way possible. You’ll probably want an order of grilled bread to soak up what’s left of the sauce and the good news is it doesn’t cross over into dinner roll territory, thereby ensuring no sauce left behind. #checkofftheboxes #prethanksgiving #stillhungry #falleats

This is Francisco Torres. Until a few weeks ago Francisco ran my kitchen at The Corner. He was having pain in his side and another of our cooks encouraged him to go to the doctor where he learned he has liver cancer that has spread to the bile duct. We’ve started a GoFundMe to help Francisco and his wife and two young sons. I humbly ask you to consider giving. ... Francisco is an outstanding cook and excellent friend. There is nothing he wouldn’t do to help and he’s shown that time and time again. We want to help lift his burden as he takes on this beast. All money raised will go to medical and daily expenses - he is being treated at UCI Medical. If your food has been a little slow lately we’re getting the hang of me being back in the kitchen. I’m filling in for Francisco until he is able to return to work. Please join me in supporting him if you are able. Orange County has moved into the red tier. If you’re not at the movies remembering what it felt like to be normal, stop by and visit. We’re able to seat 25% occupancy for indoor dining. We still have outdoor going strong so one more base covered. We love you guys, thanks for the ongoing support. Big ups to a longtime guest who had our barrel customized. Nine plus years in the books!
