Greetings everyone! I am so excited to start this year with production of Rosca de Reyes. Just like our pan de muerto, it will be an enriched dough similar to Brioche with lots of butter, eggs & milk with an enhanced flavor using orange zest & blossom water. This will be a hybrid dough using my Mother dough, Napoletana flour & a Lil kick of bakers yeast to help the fermentation & strengthen the gluten development . This year I will only offer one size (4-6people/... 12inches) & will only work with confirmed orders. Last day to order is Monday January 4th by 2pm.
