It is roasted to a perfect medium-dark resulting in dark chocolate, brown sugar/caramel with a hint of citrus at the finish. Today is the day you have been waiting for....our coffee of the month is from Costa Rica. It is from a small farm owned by Martin Gamboa. Family members hand pick the coffee which results in only the ripest cherries being selected. They are processed in an Eco-pulper and then washed and fermented. Drying is on raised beds on covered patios. Coffee is rotated every 1.5 hours for 7 days until it is ready to be milled. This coffee scored 84.5, is roasted medium and if you are already a subscriber, it will be in the mail on Monday. If not, it’s not too late. We are really excited about this month’s ‘coffee of the month’. It is from Colombia, a small group of family farms in the highlands of Medellin. A region I first visited 10yrs ago on a stopover to Brazil but now is a destination and favorite area. This coffee is grown at 5000+ feet in Volcanic soil. Fully washed and sun dried. Most of the farms are around 4 acres and the group has joined together to buy their own micro mill. This has proven to provide consistency and quality that the larger farms can’t match. The group works together to improve the quality of life for coffee producers and their families through projects promoting higher quality (and income) and education. This month’s coffee of the month is coming to us from Papua New Guinea. It is from Kigabah Village in the Western Highland Province. This coffee is Blue Mountain and Arusha. Grown at 1600M Fully Washed. A great profile of dark chocolate, lime, vanilla and butterscotch.
