Jessica Simon, an aspiring chef and Special Olympian, spends her time whipping up fantastic dishes like this glazed blueberry loaf. With the help of her mother... CathyAnn and brother-in-law Ezequiel, she is taking advantage of her kitchen and watching Food Network for cooking tips. I love Guy’s Grocery Games, says Jessica. And Bobby Flay. And Alex Guarnaschelli. But like in Special Olympics, Jessica doesn’t just watch. She loves making empanadas with Ezequiel, who is Argentinian. Her cooking practice has also led to her proudest creation: Mom’s Homemade Enchiladas, a tribute to her mother. Although the pandemic has prevented Jessica from playing floor hockey and bocce ball, she hopes that by eating healthy and taking daily walks around her neighborhood, she will be ready to compete again when it’s safe. #sosc
