Today is Souvla’s sixth anniversary. Six years, five restaurants and a frozen yogurt truck - all of them locked, boarded up or otherwise sitting idle today. It’s a strange thing to celebrate the anniversary of something so special, so personal, so extraordinary, so - asleep? We ceased our operations some three weeks ago, a difficult decision made without regret. We did it for the health and safety of the 170+ women and men who work tirelessly every day to bring Souvla to so m...any. We are so grateful to all of them, so relieved they all remain safe, healthy and employed. Today is a day when we can look back at photos, at videos, at the many memories we’ve created over the years. The struggles, the laughter, the many, many people that have donned a denim apron or a chef coat and helped make Souvla what it is. We know how much Souvla means to so many people. We know it means the world to us. We know you miss it. We miss it more than anything. Today we celebrate our 6th anniversary, and we can’t wait to celebrate our 7th anniversary in our restaurants, with all of you.

Rather than close entirely, we've temporarily relocated the restaurant around the corner via food truck! Same great Souvla (minus the froyo and wine ) with a four-wheeled new home! A note from our founder; Five years ago today, we opened the doors at 517 Hayes Street to the public for the very first time. We were excited, nervous, confident, terrified. We ran out of lamb at 1:30 in the afternoon. It was a scrappy endeavor; myself, Tony and nineteen other strangers willing to take a chance on first-time operators making a product people hadn’t seen in a format they hadn’t experienced. A quarter of those strangers are still with us today, no longer strang...ers, but the foundation of our team and the core of the Souvla family and its culture. Five years and just over three million (!) sandwiches wrapped and salads mixed, we have grown to four restaurants, a catering and production operation and 175 passionate and dedicated women and men. We have become a part of the cultural fabric of San Francisco and we are truly grateful for and humbled by it. Reflecting on five years gives us the grace to express our gratitude to each and every person that has made Souvla what it is today, and what it will be in years to come. This hasn’t been a trip; a trip is predictable, even boring. This has been a journey a journey full of new challenges, new people and new discoveries. We can’t wait to see what this journey will bring next. - Charles

The best part of waking up... is Souvla in the The New York Times ! Huge thanks to wine critic Eric Asimov for shining a light on a come back for retsina, the traditional pine-infused Greek wine. I’ve written about my own introduction to good retsina: I stopped for lunch in SF a few years ago at Souvla, a smart little chain of Greek souvlaki taverns. Among its selection by the glass, Souvla offered a retsina that it promised was good. So I tried a glass with a smoky,... charred lamb salad, and loved it. It’s an experience I’ve had the pleasure of repeating. Eric wrote that this retsina moment was his top wine memory of 2017, and we’re so pumped that he wrote this feature of great producers throughout Greece. If you’re feeling adventurous, pop in to any Souvla and ask for a glass of retsina. You just might like some pine in your wine. See more
