It hasn't fully hit me yet that this might be my last @soundandsavor meal. No, that would be far too sad. Instead, I'm trying to focus on the incredible Caribbe...an flavors Phil manages to so deftly harmonize on the plate. The Trini corn soup takes me back; I remember when I first had this savory dal, in-person at one of those near mythical dinner events. It was both dinner and a show, as I watched uneasy diners slowly shake off pretention, and classic etiquite, to dig in to grab wheels of whole corn cobs out of their bowls to savor every last bite. Not listed on the menu, the boiled peanuts were an unexpected treat. I must admit, I couldn't stop myself from snacking on them while assembling the rest of the meal! For that, potato with eggplant curry, stewed black eyed peas, and rice and peas awaited me for the entree. As if that wasn't enough, I even got a whole tray of creamy, cashew-based mac & cheese- But that's such a treat, I'm counting it as dessert. It's easier to justify a second helping that way. Finishing with a last sip of Phil's signature sorrel, the final drop came too soon. No matter where I go, no matter what I eat, there will be nothing that quite compares. It's tough to say goodbye, but this one is especially gut-wrenching. See more
