Vitamin C is especially important for humans. Unlike the rest of the animal kingdom, humans do not make Vitamin C. We need to take it in from food sources and supplements. What make Vitamin C so valuable right now? Vitamin C is an important anti-oxidant. This means it repairs tissues that have been damaged by a process called oxidation. Oxidation is what happens when metals rust. This same process happens in your body all the time. However, the healthy, colorful vegetables... in your diet counteract oxidation. Colorful vegetables are loaded with natural anti-oxidants. We are in unusual circumstances currently. If we become ill with the current virus our bodies will have huge amounts of oxidation taking place. This is called oxidative stress. How Will the Stress of COVID-19 Affect Us Long-Term? The year 2020 will be forever remembered for unbelievable stress. Never have we been asked to make so many changes simultaneously in the way we live our lives; social distancing, sheltering in place, working from home, remote learning for the children, the list goes on and on. How does all this stress affect us? Stress is processed by the brain and translated into a fight and flight response. Our nervous system is geared ...into action and we release a stress hormone called cortisol. In the short-term, cortisol helps us focus and increases energy. Long-term stress and high cortisol, however, starts breaking down tissues, weakens the immune system and depletes nutrient resources the body needs function optimally. Symptoms of chronic stress include anxiety, decreased energy levels, frequent colds, gastrointestinal irritation and sleep disturbance. What can we do to decrease the effects of stress on our minds and our immune system?
