Teff If you've never had Ethiopian food before, you're seriously missing out. Not only is the North East African cuisine extremely delicious, it also packs a nutritional punch. In the slideshow below, Ethiopian Cookbook author Konjit Zewge reveals the nutritional benefits of nine Ethiopian staples.... From fibre-rich teff to blood sugar regulating lentils, these ingredients are often used in hearty soups and stews. While these items in particular are vegetarian, meat is another staple in Ethiopian culture and is often cooked in butter for a richer flavour. Ethiopian cuisine is one of the more forgiving types of food for first-time cooks. Zewge tells The Huffington Post Canada that the beauty of the cuisine is that it can easily be adjusted to your personal taste. Not a fan of spice? Hold off on the Berbere powder. Looking to add a little nuttiness? Sprinkle on a few more sesame seeds!

Tef, ............... The tiny size of a teff seed belies its substantial nutritional weight. Many of Ethiopia's famed distance runners credit teff for their endurance, and it's long been an important element in the traditional diets on the Horn of Africa, where it's most commonly ground into flour and served as injera, the region's customary flatbread. With the widespread interest in the so-called "ancient grains," defined as unaltered through selective breeding or other genetic modifications, teff is gaining fans in the rest of the world too..

Ethiopian Tef..... This review covers the nutritional significance of tef cereal as compared to other common cereals with emphasis on carbohydrate content and starch digestibility, protein content, iron and zinc bioavailability and antioxidant potentials. Tef is a gluten free cereal and contains the highest iron and calcium among other cereals. It has high micro- and macro- nutritional profile and is becoming globally popular in the healthy grain food chain. Tef starch has a... high gelatinization temperature, an essential precondition in the preparation of low glycemic index foods. There are significantly conflicting reports of iron content of tef ranging from 5 to 150 mg/100 g dm. The traditional fermentation of injera reduced majority of the phytic acid but no significant change to mineral bioavailability was observed. This review indicated that studies on starch digestibility, protein characterization, amylase and protease inhibitors, mineral bioavailability and antioxidant potentials are needed to further explore the nutritional and health benefits of tef. Keywords: Tef; antioxidants; bioavailability; carbohydrate; mineral; protein.
What is Tef/ / In Ethiopia and Eritrea, teff is the most common cereal crop used to make engera. Teff is a tiny, round, khaki-colored grain closely resembling millet. Its scientific name is Eragrostis teff. Teffa, the Amharic word for lost, is so named because of teff's small size.
#Teff flour is a great gluten-free alternative to regular #flour. You can use it to make delicious food items such as injera bread, muffins, pancakes, and cookies. #baking
