Our 2020 Pinot Rosé spent almost 3 months in neutral barrels undergoing malolactic fermentation. Today we racked back into tank for cold stability in preparation for bottling early next year. We had a barrel sample with dinner last night and it was delish, can’t wait to share it with everyone soon.

We got to do some actual Pét Nat tasting today, and it is even better than I expected. I was very nervous for my first native ferment natural wine, but it came out great. Hopefully it will be available in a few months, still have some work to do on it.

After a week our new Pét Nat is done cooking. Just need to label it and write safety instructions. It’s super tasty and a bit bubbly.

Our four barrels of 2020 Pinot Rosé are now hanging out next to our 2019 Grenache. They went into barrel on Sunday and inoculated for Malolactic fermentation today.

Today we barreled down our Pinot Rosé into neutral barrels where it will relax for a few months until bottling next year. This Rosé is the same fruit as the Pét-Nat we bottled yesterday but inoculated with yeast instead of the native ferment in the other batch. That wraps up Pinot for the season, next up is a bit of Camp 4 Grenache sometime next month.

Our latest experiment is in bottle. 43 cases of Pinot Noir Pét-Nat hand bottled! It’s going to be a tasty, cloudy and all natural bubbly. Hopefully ready for a holiday release. Huge thanks to @carriemergenov & @greglsaunders couldn’t have done it with out your help!

It was great to spend the morning sampling the vineyard I used to help manage when I was at student @allanhancockcollege. Now five years after graduating I’m excited to be getting Pinot Noir from this great vineyard in Santa Maria.
