Oh yes! It’s soup season! This creation from items in the fridge that need to be used. Acorn squash & lentil purée soup! Fresh walnuts crumbled on top with a dab of avocado.small sprinkle of paprika for color. Yummm yummm! Cool some lentils.... Bake acorn squash in the oven at 350 until soft, oh yes cut the squash in half before baking. Sauté one large white onion. Set to the side. When the squash is tender and cool scoop the seeds out, We won’t be using these. now scoop out the acorn squash from its shell & put into a blender or food processor, add vegetable broth, sautéed onions and cooked lentils. Add a small piece of fresh ginger and purée all the ingredients together, if you need to add more vegetable broth do so for the soup consistency that you prefer. Make sure you taste before you pour it into your sauce pan you may want to add a little bit more ginger. Pour into a sauce pan add garlic, turmeric, salt & pepper to taste. Simmer for :20-30mins Before serving crumble unsalted walnuts on top a slice of avocado. Was feeling a little green today. Yum yum. Stir fry veggies with tofu, wilted arugula and spicy tumeric tahini sauce. Cook time :15mins Throw some of your fav veggies in a heated pan with olive oil, cook until tender. Mix up veggie broth, tahini, tumeric and chili flakes together in a small bowl. I don’t measure I just mixed the ingredients to the consistency and taste that I like. ... Pour sauce over veggies while still in the pan.
