Behind the scenes at @ravawines with Cellar expert Jose Our riddling racks work 24/7 riddling sparkling wines for disgorging. After aging in bins, bottles are hand stacked in cages. The cages are placed in gyro-pallets that go through a 7 day cycle to get the sediment packed in the neck of the bottle
