We love creative ways of using our products. Iris from @themcfamfarm uses our 25 Star Balsamic to spruce up her leftover Holiday Lasagna. ________________ How to enjoy leftover Christmas Lasagna.... My Lasagna is always a family favorite and it’s become a bit of an unofficial Christmas tradition at our house. I always found leftover lasagna a little dry and not as flavorful, so I started adding a healthy drizzle of sweet, thick, 25 Star Aged Balsamic from @thequailandolive . I start by reheating a piece (or pieces) in a cast iron pan or other oven safe dish (Don’t use a microwave. They are gross and make your food soggy). Plate, and drizzle with the delicious and decadent Balsamic. (Using a lesser quality Balsamic you won’t get the sweetness or thickness of the aged 25 Star. Make the investment in the good stuff. Your mouth will thank you). Enjoy! This is my favorite way of doing leftover Lasagna anytime. ________________ Tag us in your food pics and recipes so we can see what creative and delicious ways you use our products. We’ve got a mouth watering recipe from Camilla today @culinary_cam that we know you will all love. She used our Vegan Bacon Olive Oil and our Roasted Garlic Olive Oil. YUM! _____________ 3 Tablespoons Roasted Garlic Olive Oil 1 pound organic green beans, trimmed... 1 Tablespoon Vegan Bacon Olive Oil freshly ground salt, to taste freshly ground pepper, to taste Also needed: cast iron skillet (I use an enameled cast iron pan) Pour garlic olive oil in you pan and heat over medium-high heat. When the oil gets hot enough to spatter, add the beans. Let the beans sit and blister for approximately 1 to 2 minutes. Stir and allow to blister for another 1 to 2 minutes. Once the beans are blistered to your liking remove them from the pan. On a serving platter, drizzle the beans with vegan bacon olive oil. Sprinkle with salt and pepper to taste. Everybody gets to make their own pizza and the flavor is unmatched, unless you happen to have a wood fired pizza oven (We will post a complete recipe for that another t...ime). In the mean time, here is Aaron's pizza dough recipe. We've tried many different dough versions over the years, and this is by far our favorite. We hope you enjoy it as much as we do. One important side note in this recipe is in regards to the Olive Oil. You can use regular Olive Oil or to take it up a few levels you can use a flavored, co-milled Olive Oil. The Mascheroni Stianti family crafts their harmonious wines and vinegars in a medieval village (pictured above) in the heart of Chianti Classico,... the famous Tuscan wine region. ...Preserves the integrity of the wine. To do this, Castello di Volpaia uses the traditional truciolo method (a process where wine is percolated through wood shavings and slowly transformed into vinegar) and ages their vinegar in oak barrels, much like fine wine. ...Adds depth and nuance to a dish, not just acid. Volpaia Vinegars are beloved not only for their robust acidity (7.5%), but also for being intensely aromatic and exceptionally round. These vinegars enhance foods, imparting brightness without overwhelming them. The chefs at King Restaurant in NYC are huge fans of Volpaia, often basting their meats and seafood with vinegar while roasting.

Today she was recipe testing some delicious looking Tahini Cookies, dotted with oats and pumpkin seeds, using our Arbequina Oil. Have you ever made carmelized lemons before? They are a favorite of Iris’ over at The McFam Farm. Slice thin and add them to a pan of hot Olive Oil, sprinkle with salt. Cook until just browned then turn and finish the other side, being careful not to burn them. This week she used them, along with that sausage we posted yesterday, to make a delicious Summer Tortellini. She added blackened sun gold tomatoes from the garden, garden fresh basil, shallots, thyme and garlic, along ...with a healthy dash of salt/pepper and a little crushed red pepper to taste. That was all tossed with some delicious cheese tortellini and the lemons and sausage for a delicious hot summer night meal with the family. She topped it with a healthy portion of grated fresh parmigiana. This is delicious fresh and saves well for a cold snack the next day. Iris says if you don’t have tortellini on hand a plain pasta will do (especially something that catches sauce like rigatoni it’s farfalle). You can also kick the flavor up a notch by using one of our many co-milled flavored oils or even add your favorite balsamic to the mix. The best part of cooking she says is to make it your own.
