The History of Vienna Beef.... Vienna Beef began in 1893, when two Austrian immigrants came to Chicago with just a few cents in their pockets and a family recipe for a fine European sausage. Starting out at the Worlds Fair/ Columbian Exposition, they began selling their hickory-smoked delicacies from a small pushcart. Word quickly spread of a delicious new meal - a sausage on a bakery bun loaded fresh tomatoes, hot peppers, onions, pickles and more. Soon inspired by the famou...s open-air market of Maxwell Street that has become a Chicago tradition, these sausage entrepeneurs began selling throughout the city of Chicago. Proudly, Vienna Beef was born. Our 100-year commitment to quality is as strong today as it was back then, for you can still find our master Sausage Maker hickory-smoking our famous family recipe in the Vienna Smokehouses.
