We’ve used a small amount of flaked corn in traditional ‘Merican fashion, and employed stateside Noble-type varieties Zuper Saazer and Sterling into the boil and whirlpool. The result is an incredibly pale lager that presents a gorgeous white head of long lasting foam (for your slow pour needs) with subtle floral aromas and a light grainy sweetness balanced by a high effervescence. The bright, citrusy Pacamara from San Jose pairs well with the darker, dried fruit profile of the Pacamara from El Rosario. We paired these two coffees with a honey processed Pacas from Vista Hermosa to round out the body and sweeten the cup. * 2 Pacas -The Paces Cultivar will typically have a toffee sweetness with black tea and lemon highlights. Flavor Notes are cinnamon, black tea, and dark cherry. * Mad West -Mad West is a combination of coffees from our farming partners in Guatemala and El Salvador.
