We thought we would have some fun with our menu this week by trying to come up with names likeBlack Cat-fish Blackened Fishwith a zippy blackening spice blend for the taste of New Orleans--where they really know something about Halloween. We thought we’d pair it with Maque Choux, a traditional Cajun dish made from corn, tomatoes and onions. We decided to change the corn to black beans ...for an extra spooky looking (but tasty) dish. Some items like theHomemade Pumpkin Ravioliwith a roasted pumpkin seed sauce is all about the season of Fall not just Halloween.The filling for the ravioli will feature pumpkin pie spices and a touch of parmesan.These flavors will be a nice way to embrace the cooler weather and changing leaves. We missed you last Wednesday but we did love having a bit of time-off to brainstorm on future menus, like Thanksgiving (there will be plantains!) as well as work on some other projects which you will hear about very soon. .................. This week’s menu is inspired by French cuisine, but taking a more non-traditional approach. We wanted to take all the wonderful French technique and cuisine and include some Indian ingredients and flavors as w...ell as Japanese and Italian.Withthis eclectic mix of culture and flavors, we thought that each entrée needed to stand alone better and have its own supporting side-dish that is more deliciously connected. ................. For instance, theDuck Confit with Violet Mustard, will be served with braised leeks & cabbage along with a butter & thyme baked apple.
