Small production, organic farming, indigenous yeast fermentation and minimal intervention characterize naturally-driven wines. They are typically low in alcohol and have zero to very little sulfite added before bottling. Over the summer we have assembled thirty-seven examples from artisan farmers/producers around the world, and three of them are available by the glass; a soft and mineral rose from the south of France, a lively red blend from California, and a Cava from Catalunya that is pure white fruit and bubbles - perfect for this hot weather.
