Half Shell Gin ($34) Made in collaboration with Hog Island Oyster Co., Oakland Sprirt Co. has created the first ever (legal) spirit distilled thru whole oysters, using their signature Sweetwater Oysters from Tomales Bay. Oysters and gin/juniper were made to go together. That said, it took a considerable amount of bridge-botanicals to make the marriage stick. Smashed celery root bulbs, dried French tarragon, fresh parsley and lemons, to name a few. The oyster quality inhabits the texture, minerally mid-palate, and the mid-nose but is not super prevalent until you enhance it with classic gin cocktail additives (that have a bit of sugar). Tonic, Dry Vermouth, Green Chartreuse, Luxardo, and Carpano Bianco all bring the ‘Tomales Bay’ note right up to the top. Ahhhhh...the fucking Negroni. Bracingly bitter, fastidiously formulaic, wonderfully simple, surprisingly complex, conspicuously open for adaptation, and assuredly . We like using #automatic Gin No.5 ... 1.25oz Gin No.5, 1oz Punt e Mes or Byrrh Quinquina, .75oz Bruto Americano. Stir in a cocktail shaker with ice to chill and strain into a rocks glass over ice. This is one of our favorite OsCo cocktails from a naming story and conceptual standpoint. Oh yeah, it’s also delicious and refreshing. This is basically a spiked take on the classic Arnold Palmer (50/50 lemonade and iced tea). If you don’t know who John Daly is, think of him as the former Motley Crüe of the PGA tour. (Before he got sober.) ‘John Daly Killed Arnold Palmer’... 2 oz Uptown Dry Gin, .25 oz lemon flavored vodka, 2.5 oz chilled Earl Grey Tea, .5 oz lemon juice, .5 oz simple syrup, 2 oz club soda (Le Croix). Throw it all in a highball with ice, Garnish with a lemon and a quick 9 holes. Cheers,

Happy Gin Day! We honor our inventive and savory Sea Gin. While it could be considered gin adjacent from a juniper load standpoint, it celebrates the flavor diversity and broad platform that ginas a categoryprovides. We love gin and got into the game to dig deep into all the possibility’s it provides as a category. Pushing boundaries with botanicals and flavors is why we wake up everyday. ... This nasty-ass has wiped most calendars cleaner than every overly sanitized door-handle at the grocery store. However, we found one it couldn’t expunge. National Gin & Tonic day! What would our fair spirit be without its always curative and complementary muse. We celebrate with our current obsession. Add 3-4 oz of your favorite tonic, squeezed lemon, and ice to the measurements on the board.
