Happy Mother's Day! We hope you get breakfast in bed that looks and tastes as delicious as these apple crepes. . INGREDIENTS: For the batter: 2 eggs... 1 cup of flour cups whole milk (or 2%) cup water 3 tablespoons melted unsalted butter (+more for brushing the skillet) 2 tablespoons sugar 1 teaspoon vanilla teaspoon cinnamon . For the filling: 2 cups North Coast Organic Apple Sauce 2 cups Organic Ricotta 2 tablespoon of Raw Honey (+more for drizzling) . INSTRUCTIONS In a blender combine all the batter ingredients and process on high until smooth. Place the crepe batter in the refrigerator for 1 hour. This allows the bubbles to subside so the crepes will hold together better during cooking. . Heat a small non-stick skillet over medium heat. Brush it with butter. Pour one ladle (about cup) of batter onto the skillet and swirl around to cover all bottom of the skillet with crepe batter . Cook it for approximately 1 minute, then flip it to briefly cook opposite side. Continue with the remaining batter. . In a bowl, combine ricotta & honey and mix well. Once all the crepes are cooked, assemble them with filling. First, add 2 tablespoons of your mixed honey ricotta, then 2 tablespoons of North Coast Organic Apple Sauce, and then roll or fold crepes. Once all the crepes are finished you can drizzle them with more honey. Finallyenjoy! See more

This week is all about treating Mom to special recipes and showering her with love! Show Mom you care this Mother's Day with Apple Blondies she can enjoy all week long. INGREDIENTS: FOR THE APPLE BLONDIES: 1 stick unsalted butter 1 cup dark brown sugar... 1/4 cup North Coast Organic Apple Sauce 1 egg 2 teaspoons pure vanilla extract 1 cup all-purpose flour 1/4 teaspoon cinnamon 1/4 teaspoon baking powder 1/4 teaspoon salt 1 cup finely diced apples FOR THE HOT TODDY GLAZE: 1/4 cup confectioner’s sugar 1 tablespoon honey 1/2 teaspoon finely grated lemon zest 1 tablespoon whiskey DIRECTIONS: Preheat oven to 350F. In a small saucepan, melt the butter. Pour into a bowl and whisk in the brown sugar until completely incorporated. Whisk in the apple sauce and vanilla. Then whisk in the egg (ensuring the butter mixture is not too hot). . In a separate bowl, whisk the flour, cinnamon, baking powder, and salt. Stir the flour mixture into the butter mixture in two additions, mixing until just combined. Do not overmix. Fold in the apples. Line an 88 baking pan with parchment paper. Oil lightly. Spread the mixture evenly into the pan and bake until golden and a toothpick inserted in the center comes out clean, about 30 minutes. . Let the blondies cool and prepare the glaze. Mix all of the ingredients together until combined. If not using whiskey, substitute with North Coast apple juice or milk. Add more sugar if you would like the glaze thicker, or more milk if you would like it thinner. . Cut the blondies into 9 squares and drizzle with the glaze. Store in an air-tight container in the fridge. Enjoy!
