Pop-up alert! On May 2, we're doing a three course ramen popup with @muteksanfrancisco, an electronic music and digital arts festival from Montreal. The ramen pop-up is vegetarian and inspired by New Nordic cuisine. The three courses are: - Vegan 'yakitori', including one made from thin-sliced celery root and shio koji.... - Vegan ramen made from hazelnuts and porcini and flavored with lemon thyme. - Ice cream made from homegrown koji that is roasted until it has hints of chocolate. Likely retiring the pistachio clam shio from large-scale events. I love the pistaSHIO, but my new koji fascination has totally transformed how I think about layering umami into a broth. Can we make a broth that is even *lighter* with even *more* umami? Tests conducted while preparing yesterday's pop-up clearly indicated 'yes', so it's back to the lab

Debuting a new logo for our January 21 pop-up. I chose the name 'naomi' because it is a feminine name used in both Japanese and Western culture. I feel our ramen embraces Japanese and Western culture in a similar (decidedly feminine) way. Tickets on sale tomorrow at 9 AM! Eat Freakz Presents: Pistachio Clam Shio Ramen Pop-up!

This is our pistachio clam shio ramen. Thanks to @eatfreakz, we're serving it in Japantown on January 21 with an appetizer and a dessert. Tickets on sale next week, so keep an eye out!
