When life gives you green tomatoes, you bake a green tomato pie! Slice the peeled, green tomatoes thin, combine 1 TBSP apple cider vinegar and cinnamon (to your liking) to the tomatoes. Stir together and Let this sit for 30 minutes, strain tomato mixture in colander. Add 1 1/2 cup sugar, 1/3 cup flour and mix together. **During the process of mixing ingredients we pre cooked the lower pie crust to alleviate soggy bottom during final baking.** Pour tomato mixture in pie crust, cover with top crust and brush with egg wash. Sprinkled with both brown and white sugar and cinnamon. Baked at 350 degrees 1 hour. At thirty minute interval we rotated pie 180 degrees and covered pie crust edge for even browning.
