Pea Shoots and Blue Berries never tasted so good, top with a little bee pollen, toasted green pumpkin seeds and black sesame seeds. drizzled with olive oil (wal...nut oil works great as well) and aged balsamic, sea salt and pepper to taste. Fava bean hummus has an AWESOME flavor I think better than the standard Chickpea version. Mediterranean Cuisine works very well with microgreens and is very healthy overall Fava Bean Hummus 2 cups dried fava beans 2 cloves of garlic, peeled... 3 tablespoons sesame tahini paste 2 tablespoons fresh lemon juice (juice from 1/2 large lemon) 1/2 teaspoon ground cumin 1/2 teaspoon ground roasted coriander seed 1/2 teaspoon salt 1/4 cup extra virgin olive oil Place the fava beans in a small saucepan and cover with about 4 cups of cold water. Add the shallot, garlic, and 1 teaspoon salt. Bring to a boil, turn down the heat, and simmer for about 40 minutes or until the beans are falling apart. Cool to room temperature. Drain, reserving 1/2 cup cooking liquid. Transfer the beans and garlic to a food processor. Add the lemon juice, cumin, cayenne, and pepper to taste, and purée until very smooth. With the machine running, add the olive oil in a slow, steady drizzle. Don't worry if the texture is soupy; the purée will stiffen as it chills. Once chilled, stir in the chopped mint and adjust the seasoning. See more
