Nigiri, a simple but delicious treat. Did you know the first sushi restaurant in America opened in 1966? The restaurant was called Kawafuku and it was located in Little Tokyo in LA. This was the first introduction of sushi to American diners. They started by serving sashimi & nigiri to the young Americans. In the 1970’s another restaurant named Tokyo Kaikan located in LA introduced the very first California roll (avocado and crab) the idea was he wanted to create a roll that ...would introduce new diners to sushi. He first created a roll with fatty tuna and scallions, however, tuna was very seasonal to The USA in the 70’s, so he turned to avocado in an effort to provide the same mouthfeel and lusciousness that a piece of fatty tuna would & he replaced the fish flavor with crab.
