Bell Pepper and Mango Bean Dip This creamy bean dip with mango and bell peppers is perfect to serve with bread or crackers. Ingredients:... 1 serving of white beans 1 serving of bell peppers 1 serving of mango 1 serving of whole rye bread Vinegar Vegetable broth Mixed herbs (ex: smoked paprika, chili, garlic powder etc.) Salt and pepper Preparation: Soak the beans overnight, cook in water for about 40 minutes. Drain the water and leave the beans to cool. Add salt and pepper to the beans and puree with a splash of vinegar and broth. Wash and clean the peppers, cut into small cubes and add to the beans along with the mango and herbs of your choice and puree until smooth. It has been such a strange year and with everything that has gone on, it can be hard to stay positive. We just wanted to say we get it too. The way we see it though life is all about balance. When we feel anxious and disconnected about events going on around us it can be hard to see what to do as individuals. Laughter is one of the best therapies. It can be done by simply putting on a funny movie, calling up a friend and reminding each other of funny times, reading a funny story, watching funny cat/dog videos, or watching your favorite comedian. Even simply watching someone else laugh can make you laugh! Laughter triggers so many feel good endorphins. We like to see as exercise for the whole body from the inside out. Laughter is about connecting and balance. So do something to make yourself laugh right now. Even if you have to fake it at first. Even better get laughing with someone else! Carrot and Sea Buckthorn Soup This soup is packed full of vitamins and is the perfect immune booster on a cold day! Ingredients (4 servings):... 600 g carrots 2 shallots 1 tablespoon of rapeseed oil 3 cups (700 ml) vegetable stock 2 tablespoons of unsweetened sea buckthorn pulp 1/4 cup (50 g) cream Preparation: Wash, peel and coarsely chop the carrots. Peel and finely dice the shallots. Heat rapeseed oil in a pot and sauté the shallots in it. Then add the carrots, steam briefly and deglaze with vegetable stock. Cover and simmer for 25 minutes at low heat, stirring occasionally. Puree the carrots, mix in the sea buckthorn pulp and then add the cream. Season with salt and pepper and serve immediately.
