We are so excited for this week’s takeaway menu, French-Moroccan Fare. We’ll be featuring Charred Octopus with a carrot chickpea hummus, date vinaigrette, a salad of carrots, mint, chickpeas, and medjool dates, and a harissa oil. We also have a Halibut Tagine on the menu as well as Lamb Couscous braised with saffron, prunes and almonds. Plus, we have our White Truffle Risotto Kit available again this week along with our 18oz. True Japanese Wagyu Beef Kit to cook at home. Don’t forget to add on a bottle of wine to pair with your dinner or some of our cocktails. We are back with this week with a very special Tribute Menu, honoring the legendary chef and one of the founders of Nouvelle Cuisine, Chef Pierre Troisgros.Chef Troisgos passed away last Wednesday at the age of 92, leaving behind a legacy that we have been inspired by and hope to honor through our Tock takeaway menu for October 1-4. Chef Troisgros and his brother Jean were among the first in the Nouvelle Cuisine movement along with other famed chefs like Paul Bocuse. The br...others took over their parent’s restaurant in Roanne, France, in the 1950s naming it Les Freres Troisgros. Their restaurant has received 3-Michelin Stars consecutively for 52 years (and counting). Their style of cooking departed from the traditional French cuisine, which was often heavier.Instead, they began using lighter and fresher ingredients. Their iconic dish, Salmon with Sorrel Sauce, paved the way for this gastronomic movement. His son Michel, and grandsons Cesar and Leo continue the legacy. The new feature film examines the nature of teamwork at the Michelin level, following Kinch and his team as they travel to France, collaborate with culinary luminaries, and celebrate Manresa’s 15th anniversary. To mark the oc...casion, Mélisse x Citrin will offer a five-course menu with dessert from renowned Pastry Chef Sherry Yardwhom Manresa’s Pastry Chef, Courtney Moisant, describes in the film as her career’s inspiration. This week we’ll take a trip down memory lane... all the way back to Chef Josiah’s first restaurant JiRaffe. In 1996, JiRaffe was opened alongside childhood best friend and fellow chef, Raphael Lunetta. We are so excited to share this tribute menu with you and some of the dishes that made JiRaffe so special, including their Wild King Salmon, Parsnip Puree, Fennel and Balsamic Nage, which was the dish that won Raphael and Josiah ‘Best New Chef’ in 1997 by Food & Wine Magazine.
