Were you charged with bringing the dessert to brunch tomorrow? We've got you! If you want to really delight your mom, don't think twice : start gathering the ingredients, follow the easy preparation steps, and top it off by letting her know you finally got proper coverage. She will be so proud ! If you're missing that last ingredient...let us know! Ingredients: 4 large eggs 16 oz of mascarpone cheese ... cup of granulated sugar 6 oz of raspberries 6 oz of blackberries 1 cup of milk 11 oz of vanilla cookies Preparing: 1. Using two large bowls, separate the yolks and the whites of 4 large eggs. 2. Beat the egg whites with a mixer until you get nice peaks. 3. In the egg yolk bowl, add the sugar and mix well until the color changes to a soft light yellow (you should not see any sugar crystals). Add in the mascarpone cheese. 4. Use a silicone spatula or large spoon to fold the egg whites into the mascarpone and yolk mixture. Work from the bottom of the bowl upward in a circular motion very carefully to prevent losing air bubbles from the egg whites. Set aside. 5. In another bowl, cut the berries in half and mix them together. Arranging: Use 4-8 clear jars or glasses. Start by layering each with a spoonful of the mixed berries. Pour milk into a separate bowl and dip the cookies before placing them on top of the berry layer. Don't leave the cookies in the milk too long, or they will get soggy. Add the cream mixture on top, forming a new layer. You may repeat that same order to create a layered effect until jars are filled to the top. Refrigerate for 90 minutes and serve with love.

By default, we tend to allow negative self-talk to control that mindset process. Stop letting your mind run on auto-pilot and intentionally steer it in a positive, SWEET direction. In our world, surprises aren't always good news, but this one is - delicious , in fact! We can't think of a tastier way to surprise your special someone than this dish. And don't let the ingredients list throw you off because preparing it is as easy as pie. Actually, it's easier, so grab what you'll need to make it happen and get ready to delight: Ingredients: 3 tbsp. of olive oil 1 tbsp. of salt... 1 tbsp. of pepper 3 tbsp. of butter 2 cups of finely sliced leeks 2 medium yellow onions (chopped) 5 cloves of garlic (minced) 1 tbsp. of chopped basil 1 tbsp. of thyme The zest and juice of one lemon (separate) 1 cup of chopped pistachios 1 cup of arborio rice 2 cups of white wine 4 cups of vegetable or chicken stock 1 cup of grated parmesan cheese Preparation: Add 2 tbsp. of olive oil and 2 tbsp. of butter to a pan on medium heat. Once the butter has melted, add the onions, leeks, salt, and pepper. Cook until fragrant or until onions are fairly translucent (about 3 minutes). Add garlic, basil, and thyme to the mixture, stirring evenly. Cook for about 1 minute. Then, add the arborio rice, stirring until all of the grains are well coated with the mixture. Follow with the lemon zest and pistachios, adding the leftover tbsp. of olive oil and mix it thoroughly. Once the rice starts to get sticky, add half the wine to deglaze the flavors from the pan. As the wine evaporates, add more and keep stirring. Continue this process until all of the wine has been poured. Repeat the same steps using the vegetable stock, adding it little by little and stirring until the rice soaks it up. Have a taste and adjust the amount of salt, pepper, and stock if needed. Once the rice is 90% cooked, mix in the juice of the lemon you previously zested. Then, add the leftover tbsp. of butter and parmesan. Turn off heat, and stir in evenly until completely melted and thoroughly mixed in. Wait for 8 -12 minutes and serve.
