When African slaves fled to the North or relocated following emancipation, they took many of their recipes with them: such as biscuits and molasses, collard greens, fried catfish, and butter beans. These culinary traditions have evolved into what today is known as soul food.
What would soul food be without family and friends to share it with? Take the fellowship out of soul food and it doesn't quite taste the same. At the heart of everything we cook is the thought of the people who will be sharing it. We always remember to add a dash of love and a sprinkling of friendly banter to make the meal taste better.
Although soul food has its roots in the rural south, it's not considered the same type of cuisine as Southern food. Rather, this cuisine centers around recipes prepared for generations by African Americans-since the time of slavery.
Do you know why fried chicken has become such a central dish when it comes to soul food? Most African slaves were only allowed to raise chickens for their protein source (rather than more expensive meats), so this quickly became a mainstay in many homes.
While fried chicken is a popular dish in African soul food cuisine, it was actually brought over to the United States by Scottish immigrants. African slaves adopted this dish, using different seasonings and spices to make it their own.
