Happy early-Valentine's Day! We will miss seeing you this weekend and wanted to send along a favorite recipe from @ChefBernardGuillas - his Chocolate Soufflé. The perfect Valentine treat! Soufflé 10 oz semisweet chocolate, 72% cocoa, chopped 6 large egg yolks... 6 large egg whites cup granulated sugar 2 Tbsp. sweet butter, melted 1/4 teaspoon cream of tartar pinch sea salt 1 Tbsp. Grand Marnier The Soufflé Dishes 1 Tbsp. sweet butter, softened cup granulated sugar 8 oz. semisweet chocolate, cut into eight pieces Lightly butter eight cup soufflé dishes. Coat with sugar. Place on baking sheet. Set aside. Preparation Preheat oven to 375F. Add chocolate and butter to large mixing bowl set over pot of barely simmering water, ensuring bottom of bowl does not touch water. Stir until melted and smooth. Remove from heat. Whisk in egg yolks, one at a time. In separate mixing bowl, beat egg whites, cream of tartar and pinch of salt to soft peaks. Add sugar. Beat to stiff peaks. Whisk quarter of egg whites into chocolate. Gently fold in remaining egg whites, using rubber spatula. Spoon mixture into prepared soufflé dishes. Insert one piece chocolate into center of mixture. Bake in center of oven 12 minutes or until nicely puffed. Presentation 2 tablespoons powdered sugar Dust top of soufflé with powdered sugar before serving. Top with vanilla ice cream. #marineroom #lajolla #ljbtc #lajollashores #san diego

With this heat - a refreshing summer cocktail is a must! Enjoy Chef Bernard's Lavender Citronelle Martini recipe below and tag us @MarineRoom to show off your creations! Serves 4 Ingredients: 3 stalks lemongrass... 1/2 cup water 2/3 cup granulated sugar 6 sprigs lavender 1/4 cup honey crystals 1/4 teaspoonground star anise 1 teaspoon flaky sea salt 1/2 lemon 1/3 cup Lemoncello liqueur 1 1/2 cups Grey Goose Vodka 1/2 peach, cored, quartered Instructions: Cut lemongrass in 3-inch long pieces, discarding the hard bottom root. Crush pieces with a mallet. Add water, sugar, lemongrass and 2 sprigs lavender to saucepan over medium heat. Simmer two minutes. Remove from heat. Steep for 30 minutes. Strain through fine sieve. Refrigerate until well chilled. Combine honey crystals, star anise and flaky sea salt in small mixing bowl. Spread evenly onto plate. Rub cut side of lemon around rims of glasses. Dip rims into honey crystal mixture. Set aside. Combine lemongrass syrup, Lemoncello, and vodka in a mixing bowl. Stir well. Transfer half of mixture to martini shaker. Add 12 ice cubes. Shake 15 seconds. Strain into 2 martini glasses. Repeat process. Garnish with peach and the 4 remaining lavender sprigs & enjoy! See more
