First course of the Thailand travel menu. We got a seat at Gaggan and built a trip around it!! We experienced a rare sight into one of the best dining experiences ever. Thank you @gaggan_anand "The best bite at Gaggan" Snapper with Bengali mustard, roasted chanterelles, pickled mustard seeds, spicy pickled Quince and a rich fumet made from the snapper bones. Its all folded up and woodfired to supple doneness!! An intricate dish deserves and needs an intricate wine.
