As the weather gets colder we are looking for warm yummy foods. Check out this Chicken Zoodle Soup recipe, #bundleup and enjoy! Ingredients: - 3 1/2 pounds bone-in (thighs or breast) - 9 cups water... - 1 1/2 teaspoons salt - 1 pound carrots, chopped into 1/4 slices - 1/2 cup chopped green onion - 2 tablespoon garlic oil - 2 springs fresh rosemary - 2 teaspoons fresh thyme - 3-4 medium zucchini Instructions 1) Place the chicken in a large stock pot and cover with water. Add in the salt, carrots, green onion, garlic oil, rosemary, and thyme. Bring to a boil, reduce heat to medium/low, cover and cook 20 minutes. Keep mixture cooking and remove the chicken to a cutting board. 2) While the soup is cooking, make the zucchini noodles. Using a spiralizer, make the zoodles and place on a plate until ready to add. If desired, chop the noodles roughly so the pieces aren't too long. 3) Let cool for 5-10 minutes, until you can handle the meat. Remove skin and remove the chicken from the bone. Chop up the big pieces. Place all meat back in the soup along with the zucchini noodles and cook 5-10 more minutes. 4) Store leftovers covered in the fridge up to 6 days. Get creative with this yummy hummus recipe. Enjoy it with cucumbers rather than crackers! Ingredients: - 3 cups cooked chickpeas, peeled (from 1 to 1 1/4 cup dry... - chickpeas or from quality canned chickpeas. See recipe notes for more instructions on cooking and peeling chickpeas) - 1 to 2 garlic cloves, minced - 3 to 4 ice cubes - tsp kosher salt - Juice of 1 lemon - Hot water (if needed) - Early Harvest Greek extra virgin olive oil - Sumac - Easy to taste with your favorite seasonings Instructions: 1) Add chickpeas and minced garlic to the bowl of a food processor. Puree until a smooth, powder-like mixture forms. 2) While processor is running, add ice cubes, salt, and lemon juice. Blend for about 4 minutes or so. Check, and if the consistency is too thick still, run processor and slowly add a little hot water. Blend until you reach desired silky smooth consistency. 3) Spread in a serving bowl and add a generous drizzle of Early Harvest EVOO. Add a few chickpeas to the middle, if you like. Sprinkle sumac on top. Join Dr. Schulz and Lean MD Mentor, Alex, in creating healthy Halloween themed deviled eggs! Ingredients: 6 large eggs... 3 Tbsp low fat mayonnaise 3 tsp dijon mustard 1 tsp lemon juice 1 can ripe olives Optional flavorings: dash of hot sauce, tsp garlic powder Optional garnishes: paprika, chives Instructions: 1) Boil: Add eggs into a large saucepan and add cold water so that water covers eggs by about 2 inches. Cover and bring water to a boil* over high heat. Once boiling, remove pot from heat and let set for 10 minutes. 2) Ice Bath: While eggs sit, fill a large bowl with cold water and ice cubes. When eggs have reached 10 minutes, remove them from the hot water and drop them into the ice bath until cooled completely. 3) Prep Eggs: Gently tap eggs on the counter all around the shell to break it, then peel off shell. Cut eggs in half, lengthwise, then use a small spoon to gently scoop out the yolk. 4) Filling: Mash yolks with a fork or potato masher, then stir in low fat mayo, mustard, lemon juice, and optional flavorings. 5) Pipe: Spoon yolk filling into a pastry bag fitted with a large star tip (alternatively, use a Ziploc bag with a corner cut off or simply spoon it into the egg whites). Pipe filling into each egg white, garnishing with paprika and chives. 6) Spiders: cut black olives in half long way. Place half on the filling of one egg curved side up. Slice other half of olive into eight legs. Add to body to create a spider.
