Larb Gai is a dish of browned ground chicken, mint, basil and red onions dressed with lime juice and ground red chiles that's popular in Laos and Isan, neighboring rural sections of Thailand. If you want to know how to cook the best Larb dish here is the recipe!!! -------------------------------------------------------------------- INGREDIENTS -------------------------------------------------------------------- cup raw sticky rice (see Note) or 2 tablespoons roasted rice p...owder (available at Asian markets) 16 ounces coarsely ground or finely chopped white- or dark-meat chicken (lean beef, such as sirloin, can be substituted) teaspoon hot chili powder, preferably Thai or Lao 4 teaspoons fish sauce (nam pla) 5 teaspoons freshly squeezed lime juice cup slivered red onions 2 tablespoons chopped cilantro 2 tablespoons sliced scallions 10 whole mint leaves, more for serving Lettuce leaves cucumber spears, for serving 4 cups cooked sticky or jasmine rice, for serving -------------------------------------------------------------------- PREPARATION -------------------------------------------------------------------- Step 1 To make roasted rice powder, heat a wok or skillet over high heat. Add raw rice and cook, stirring often, until rice is toasted and dark brown, but not black, 3 to 5 minutes. Remove from wok and set aside to cool. Grind to a coarse powder in a mortar, blender or coffee grinder; set aside. Step 2 To cook chicken, heat a wok or skillet over medium-high heat. When very hot, add 2 tablespoons water, then add chicken, stirring constantly to break up any lumps. Cook just until cooked through, about two minutes, then transfer to mixing bowl. While chicken is just warm, add remaining ingredients (except for garnishes) and roasted rice powder. Mix gently but thoroughly. Taste and adjust seasonings. The mixture should be tangy, salty and lightly spicy. Step 3 Spoon onto a serving plate and surround with mint, lettuce, and cucumber. Serve with rice. If serving with sticky rice, pinch some off, mold into a small ball and dip into larb, scooping up a little of each ingredient. In it: sautéed veggies and noodles, scrambled eggs, peanuts, tofu, and a crazy addictive sauce. ... ------------------------------------------------------------------------------ INGREDIENTS ------------------------------------------------------------------------------ Kosher salt 8 oz. wide rice noodles 2 tbsp. lime juice 2 tbsp. brown sugar 1 tbsp. fish sauce 1 tbsp. low-sodium soy sauce 1/4 tsp. cayenne pepper 2 tbsp. vegetable oil 1 bell pepper, thinly sliced 2 cloves garlic, minced 2 eggs, lightly whisked 1 lb. shrimp, peeled and deveined Freshly ground black pepper 2 green onions, thinly sliced 1/4 c. roasted peanuts, chopped ------------------------------------------------------------------------------ DIRECTIONS ------------------------------------------------------------------------------ Step 1 In a large pot of salted boiling water, cook noodles until al dente. Drain. Step 2 In a small bowl, whisk together lime juice, brown sugar, fish sauce, soy sauce, and cayenne pepper. Set aside. Step 3 In a large nonstick pan over medium-high heat, heat oil. Add bell pepper and cook until tender, about 4 minutes. Stir in garlic and cook until fragrant, about 1 minute more. Add the shrimp and season with salt and pepper. Cook until pink, about 2 minutes per side. Step 4 Push the shrimp and vegetables to one side of the pan and pour in the egg. Scramble until just set then mix with the shrimp mixture. Add the cooked noodles and toss until combined. Pour in the lime juice mixture and toss until the noodles are coated. Whichever way you go, the one essential step to make a really great green curry is to fry off the curry paste. Make this with chicken or even entirely meat-free. With a sauce this good, you can put anything in it and it will taste amazing! ------------------------------------------------------------------------------------------------... Ingredients ------------------------------------------------------------------------------------------------ CURRY - USE ONE: 4 - 6 tbsp Thai Green Curry Paste (Maesri best) OR (Note 1) 1 quantity homemade green curry paste (Note 1) EXTRAS - FOR JAR CURRY PASTE (NOTE 2): 2 large garlic cloves, minced 2 tsp fresh ginger, finely grated 1 tbsp lemongrass paste (Note 2) GREEN CURRY: 2 tbsp vegetable oil 1 cup (250ml) chicken or vegetable broth, low sodium 400 g/14oz coconut milk , full fat (Note 4) 1 - 3 tsp fish sauce * 1 - 3 tsp white sugar * 1/8 tsp salt * 6 kaffir lime leaves, torn in half (Note 5) 350 g/12 oz chicken thigh, skinless boneless, sliced (Note 6) 2 Japanese eggplants, , small, 1cm / 2/5" slices (Note 7) 1 1/2 cups snow peas, small, trimmed 16 Thai basil leaves (Note 8) Juice of 1/2 lime, to taste ------------------------------------------------------------------------------------------------ Instructions ----------------------------------------------------------------------------------------------- 1. Heat oil in a heavy-based skillet or pot over medium-high heat. 2. Add curry paste (and garlic, ginger, and lemongrass Extras, if using) and cook for 2 to 3 minutes until it mostly "dries out" 3. Add chicken broth and coconut milk, mix to dissolve the paste. 4. Curry in a jar seasoning: Add 1 tsp fish sauce, 1 tsp sugar, no salt. 5. Homemade curry paste seasonings: Add 3 tsp fish sauce, 3 tsp sugar, 1/8 tsp salt. 6. Add kaffir lime leaves. Mix then bring to simmer. 7. Add chicken, stir then lower heat to medium so it's bubbling gently. Cook 7 minutes. 8. Add eggplants, cook 5 minutes until soft. 9. Taste sauce. Add fish sauce or salt for more saltiness, sugar for sweetness. 10. Add snow peas, cook 2 minutes until a bit softened, then stir through basil and lime juice. The sauce should have reduced but will still be a be on the thin side, not thick - that's how it's should be. DO NOT keep simmering - the sauce will darken. 11.
