As a restaurant we hold ourselves accountable to understand how the meat that we serve is raised. What better way to pay homage to the stewards of the land then to name a burger after the ranches that we support. Meet our newest addition, the Richard Anderson. We’ve blended @richardsgrassfed and @andersonranchesoregonlamb into a ball that is smashed on our grill and topped with jack cheese. It’s served on our Konjoe bun with some homemade harissa, herbed yogurt, lettuce, tomato, cucumber and pickled red onions. We did it! We made it to the end of this year! March 13, 2020 was the day that we were told to shelter in place. Worst Friday the 13th ever. We closed for 2 weeks to digest what was happening and come up with a game plan. We permanently closed our first restaurant at SPSM. Our operations at SAP and Levi's Stadium closed indefinitely and we were left with one restaurant in Santa Clara. Thank you for bearing with us while we navigated the obstacles we faced throughout the year.... When we first reopened we started taking donations for hospital meals and delivering them to various hospitals across the bay. We then tried making family meals (it all started with mother's day) but soon decided to stop once restaurants opened for outdoor dining. We took a stab at preparing rice bowls but it was too crazy to run two concepts out of a single restaurant. So we were left with our original burger bar menu. We tried to make it work but it was a challenge. At one point it didn't look like we were going to make it. Sales slowed down a lot and we were in no position to make an investment in outdoor dining. In late October we decided to pivot our concept and take a stab at serving food that is more accessible. We guess you could all it farm to table pasture raised faster food. It made some customers upset but at that point we were willing to try anything to make the business survive. Fast forward to today and we think we made the right decision. Sales have grown and the business is definitely more sustainable today than it was a couple month ago. We still have a ways to go but we are optimistic about these changes and are working hard to make this new Konjoe Burger better. Thank you all for supporting us through this wild ride. It was a painful year with a lot of revelations and we are looking forward to what 2021 has in store. To all of our guests, We learned this morning that one of our team members had a positive COVID result in their household. None of our employees are exhibiting any symptoms, but out of an abundance of caution, we have decided to close the restaurant this weekend, get all the team members tested and perform a deep clean of the restaurant. We will be contacting the Santa Clara County health department's contact tracing department on Monday to consult with them and determine ne...xt steps. Today the county is allowing restaurants to open for indoor dining at 25% capacity. As great as this sounds, for us it means that we can put three tables in our restaurant seating a total of 12 people. For now we are going to stick to take out because it doesn’t make economic sense to open our dining room at 25% capacity. The Shiitake Jack was created as an homage to the Mushroom Swiss burger. Not exactly the rendition you may be used to with white button mushrooms and Swiss cheese. We take shiitake mushrooms and slowly cook them down in mirin, tamari and garlic. The sauce is made by roasting garlic, scallions and tomatoes and blending this mixture with mayo. Pair these items with housemade pickled jalapeños, a @creamco_meats patty, jack cheese, and a custom @panoramabaking roll and you have yourself a delicious and better rendition than the classic.
