I've gotten a question of what galangal is from many customers at the restaurant when they saw the word in one of our soup menu 'Tom Kha Kai'. Kha(galangal) is the name of this herb which is the main ingredient in the soup. It's such a benefitial herb that has been in Thai kitchen for a long long time.
